All summer we have been enjoying popcorn and movies. This is probably – by far – the most popular recipe I have made.
- 1/2 cup of popcorn kernels
- 4 tablespoons of sunflower oil
- 1/3 cup of coconut oil
- 1/3 cup of maple syrup
- 2 tablespoons earth balance
- 2 tablespoons brown sugar
- sea salt
Heat the sunflower oil on medium high heat and add two kernels. Once kernels pop, add the remaining kernels.
In a separate pot, melt coconut oil in saucepan, add syrup then boil for 2-3 minutes. Boil rapidly – mixture will be frothy. Add earth balance and brown sugar. Constantly stir.
Pour the caramel sauce over the popped popcorn and stir. Sprinkle with sea salt.
