Well, it is appropriate to give credit where credit is due: this delicious and simple recipe is from my sister-in-law, Kimmy. She first made it when I was visiting her and my brother in Buenas Aires. She has such a skill for creating new and yummy recipes!
- 1 cup cooked cous cous
- 1 chopped red, yellow or orange pepper
- 3 chopped green onions
- 1 avocado diced
- 6 chopped basil leaves, chiffonade
- 1/3 cup sliced almonds
- 2 Tbsp melted honey
- 2 Tbsp white vinegar
- 2 Tbsp spicy mustard
- 5 Tbsp olive oil
To make the dressing, whisk the vinegar and mustard, add in honey and then continually whisk while adding in the olive oil.
Add in the cooked cous cous and blend.
Add in the chopped ingredients and mix.
